Saltah (Ground Meat Stew) Recipe
  • 1/4 cup vegetable oil
  • 1 lb (450 g) ground beef or lamb
  • 2 onions, chopped
  • 4 Yukon Gold potatoes, peeled, diced into 1/2-inch cubes
  • 2 tomatoes, finely chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • 5 cups beef broth
  • 2 large eggs, beaten
  • 2 tbsp finely chopped cilantro leaves
  • 2 tbsp each: zhug, hulbah
  1. Heat oil in 3-quart saucepan over medium.
  2. Add meat and onions.
  3. Cook, stirring often, 10 minutes.
  4. Add potatoes, tomatoes, salt, pepper and broth.
  5. Bring to boil on high heat. Cover.
  6. Reduce heat to medium-low.
  7. Simmer 1 hour or until meat and potatoes are well cooked, adding a little water if necessary.
  8. Stir in eggs and cilantro.
  9. Cook 2 minutes.
  10. Remove from heat.
  11. Stir in zhug and hulbah.
