Guinness Gingerbread

Guinness Gingerbread
  • 1 cup Guinness Stout
  • 1 cup molasses
  • 2 cups APF
  • 1 1/2 teaspoons baking powder
  • 3 tbs ground ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp of ground cardamom
  • 1 tsp ground cloves
  • 1/4 tsp freshly grated nutmeg
  • 3 eggs
  • 1 cup packed dark brown sugar
  • 1 cup granulated sugar
  • 3/4 cup vegetable oil
  • Icing sugar for dusting
  1. Preheat oven to 350°F. Grease an 11"*7" non-stick cake pan and line with parchment paper (trust me you need to generously grease the pan, this is a SUPER sticky cake!!).
  2. Boil stout and molasses to a boil in a saucepan, remove from heat and cool to room temperature. It is important to allow it to cool, you do not want scrambled eggs
  3. Sift together flour, baking powder, and spices in a bowl. Whisk eggs and sugars, and then whisk in oil.
  4. Add the molasses mixture to eggs and sugar mixture. Lastly add flour and spices and whisk until just combined.
  5. Pour batter into cake pan and tap the pan to remove any air bubble.
  6. Bake in middle of oven until for approximately 50 mins or until a toothpick inserted comes out clean.
  7. Cool cake in pan on a rack 5 minutes.
  8. Turn out onto rack and cool completely.
  9. Once the cake has completely cooled, using a gingerbread cookie cutter, cut the cake or you can just make square pieces and dust with icing sugar.
Notes: This gingerbread freezes well for up to 3-4 weeks.
